Injector differences
How would a s4 TII run if it had high impedance injectors in it? And how would a high impedance/saturated system run with low impedance injectors all of the necessary size. Im just wondering as we put some unkiwn TII injectors in my s4 TII and it runs like trash missing and stumbling all the time when accelerating(or at least trying to). Could it be the type of injectors or just the condition?

S4 TIIs came with both high and low impedance injectors. If the car is older then 87.5, it's probably low. If it's newer, then it's high. You can tell because low impedance cars will have the injector resistors.
low impedence injectors in a high impedence harness requires resistors (or a different injector driver. FJO makes one, see the single turbo forum). Many say 10 ohm resistors (the most common) are fine, while some others (like me) swear lower ohm resistors improve injector staging, depending on your engine management system. The stock resistor pack in 86-87.5 cars is around 6 ohms I believe.
Am I correct in saying that if you put a multimeter across an injector, it will spit out its impedence? If so, what impedence would one see across a low and across a high impedece injector?

Yeah. Your just measuring the resistance of the injectors coil.
JPG of a solenoid resistor package located bolted to the fender below the airfilter assy. NOT my car. JPG stolen off the net.
