i believe antiseize is for when you put the spark plugs in, not to take them out. I just hope they aren't permanently stuck in there....ouch.

ok, you can get antiseize any parts store, they come in little packets for one time use, and in little tubes if you want to keep some handy.

So , yes you do need anti sieze. Anti Sieze is for when you take them SO you can take them out.
You want to use antisieze on anything that gets cold/hot a lot. Like spark plugs and exhaust.

But won't that also make the exhuast bolts/nuts easier to come loose from vibration? My header nearly fell off the car (of course it got really loud first). And that was without the use of anti-seize.

Erm, just torque it more.
There is a certain amount of torque that you're supposed to match for spark plugs. If you go over that by a decent amount, crap like this starts to happen. If you can't get a spark plug torqued to 20 or so out of it's socket without anti-sieze... you should probably buy a different car because every other bolt you will encounter will prompt you to commit suicide.
