If I recall correctly, Sterling recommends around 3 +/- psi for his carb. I don't have mine hooked up yet, so I can't tell you what I am running this week.
I just checked the FSM, and the factory fuel pump puts out 2.84 - 3.54 psi, found on page 16 of chapter 4A out of the 1985 Fuel and Emissions chapter of the Factory service manual which can be downloaded here (which I HIGHLY recommend you do!) - http://foxed.ca/foxed/index.php?page=rx7manual#firstgen
The factory specs of the fuel pump are good for the sterling when new, but after years of wear and tear it can reduce the pressure;
Many people on the boards say that when they upgraded their fuel pump to something else, with a regulator, they had much more power as they weren't starving the engine from fuel when they got on it hard. This is something you may have to deal with.
A regulator is $40 or so shipped from summitracing.com; I would highly recommend saving up and getting a higher pressure fuel pump with a regulator. Or (shameless plug), you can buy my Holley/Summit Racing fuel pump WITH a regulator and wiring kit for $80 plus shipping :P
