Streetported s4 na vs late 1960's mustang v8

I raced a late 60s mustang today( a nice restored one too), I lost the first few times from a roll in 3rd gear (he was probably in 2nd , i didnt downshift because i didnt want to beat on my car because i knew i was prolly gonna lose even if i redlined).

Everytime I lost (2 or 3 times from a roll), I was behind him about by about a carlength at about 6000 rpm and he would start pullin and then let off the gas, then i would just fly right by finally hitting 4th gear after he let off everytime.

On the launch though at a redlight, I launched it (not sure what rpm 5000rpm+)and my car spun one tire a little (no posi ,open diff), and i was right beside him the whole way dead even, we then had to slowdown because of cars in front of us..he then started flooring it again and started weaving through traffic, I didnt bother trying to race him anymore because I had already made my point by keeping up with him side by side on that launch to 7000rpm in 1st gear. (dont like weaving through traffic racing either)

I have a streetported s4 na, full exhaust , lightweight flywheel, centerforce df clutch, kn intake, removed 5/6 ports

Well wouldnt dropping it at like 5500 - 7000 be significantly worse ? Again I dont know much about launching and im a novice at this stuff, ive worked on the car more than I've driven it.

I figure with my 5/6 ports out maybe the correct rpm to launch is 3500-4000rpm ?
