Any particular reason why I shouldn't?

Wiring is layed out on page F2-53 of the FSM (S5).

It's possible, but I wouldn't recommend it simply because the stock wiring is inadequate. When it comes to fuel, don't take a chance. :)

What's the pinouts for the pump relay, it's rather vague on the diagram?

On the diagram, there are some little numbers; 86, 87, 30, etc. Those numbers correspond to relay terminals. If you look on the relay itself, you'll see that they're numbered. Just match them up! :)
