Engine Operating Temp

I have been looking @ my tuners configuration of my S5 TII. All the specs in sig.
I see that they set the Engine Operating Temp to 82C. All the other rotary base maps and others I have downloaded are 76C.

Should I adjust to 76C or lower?

I am using the mishimoto mazda rx7 thermostat 1989-1995
Which has an opening temp of 68C over the stock 80C thermostat.
I am noticing that I do run ALOT cooler on the temp gauge and it is only a quarter of the way up rather than half way after a good run.

Mazda uses 65c as the "warmed up" temp. once its over 65c its warmed up, closed loop is turned on, no more enrichment based on coolant temps, and the ACV switches modes . its a little on the cold side, but they were trying to keep emissions as low as possible.

So when looking at the older Haltech E8 "Main Setup" Should I lower that Temp value? Is so what with my configuration?
Since I have 68C thermostat. I am think 76C for now and see how the car responds. I wonder even if this value has any effect on maps.

I thought they turned up the temps to help with the emissions and burn the extra oil and fuel off.

I am also thinking that the higher engine temps help keep the oil that is injected for lubrication/Premix burnt off. Rather than coaking the inside of the engine.

higher temps do help with emissions, but Mazda uses an 82c temp thermostat from 1968-2003. they did take measures to make it warm up faster, and the FD has a fan that turns on later, but other than that they didn't raise temps

the Haltech does what you tell it to do, so what happens when you change that value depends on how the setup is set up
