wiring questions?...

OK I admit I'm an OCD anal retentive motherf*%*#er. I'm going through my car with thoughts of a medium restoration in mind. Car is getting tired and I thought I would modify some systems starting from scratch. So.. I have the whole (and I mean whole) interior ripped out and I wanted to redesign it to my specs. After getting the dash out (biatttcccch!) I've discovered that that crash pad is in horrible shape but rather than buy a whole new one at a ridiculous cost, I am going to re-design it as well. I want to remove the passenger side airbag, the entire audio system, and the crappy factory alarm system. This brings me to my question. Can I go through the dash wiring harness and remove those electrical wires (clean it up a bit) for those systems without effin up the rest of the electrical systems? Can I remove the passenger airbag and retain the drivers side one? Most importantly how do I know which wires to remove, do I just trace them to the connectors? Am I being an idiot!? I tried looking at the wiring schematics for the car and that might as well be in foreign language cause I don't get that shit at all and it doesn't seem to be color coded either. Help is appreciated!
PS is that spongy insulation around the wiring bundles necessary? It's all falling off and nasty as an old ladies stretch marks. I was thinking of taking all the old tape off as I work and re-wrapping it.

Are you trying to see how frustrated and how big of an headache you can handle? If you don't like the stock alarm, why don't you just pull the relay and/or fuse for it? As far as the passenger airbag goes, I have a friend who made a few resistors for the driver's airbag. This allowed him to remove the airbag without the light coming on in the cluster. I'm guessing it will work for the passenger one also. Why are you worrying about the harness behind the dash? It does'nt get hot enough back there to harden the wires. The foam stuff on the harness, I don't like it either but who is going to see behind the dash? If it bothers you that much, rub it off.
