The intake and exhaust ports inside the engine are widened (ported) so that more air may flow through. From what I gather, the result is anywhere from a %5 - %15 increase in airflow for "street ports", depending on how much was shaven away. The bigger the port, the more airflow you get in your top end; which is relatively bought with a less responsive bottom end. It also requires you to raise your idle, or the engine will "lope". Which isn't necessarily bad, but I for one like a smooth idle! :)
I never really researched bridgeports and Peripheral ports because I never intended to get one in my own car...hopefully someone will post a nice writeup (with pictures please :D ) so that I may know as well, because I'm too lazy to research, hehe :p:
