Jerky acceleration, fuel pressure, or fuel flow?

I have been recently rejetting my weber side-draft 45 DCO blowthrough setup. I put in f16 emulsion tubes, smaller air bleeds, and smaller main jets. It ran perfectly for a day. Then it got really humid, and it ran like crap. Then it got really dry and it ran even worse. Now, under wide open throttle, and sometimes even on casual driving, it jerks back and forth when i accelerate.

I have been thinking that i just need to get bigger fuel jets, but today i went to check my fuel pressure (i have an inline fuel pressure guage). I looked at it, and the fuel pressure guage had these little bubbles in it. So i looked closer, and it turns out the meter guage is filled with this jelly-like stuff..... uh what the hell is this!? So i'm wondering if maybe this jelly like stuff is causing fuel issues..... what do you think? And what the hell is that jelly!?

Thanks in advance!
