First Car! 83 S Project Questions

Hi guys new to the forum and rx7s and car work in general. Im probably going to have a lot of questions for the "experts" so I figured that I would just make my own thread. Also before all the internet geniuses tell me how the search features work on the site and how I could find all the answers with it, know that I understand that. However, the fun of being on a forum is posting and talking to others and if there's an issue with that, stay out of my thread.

Now, my first questions are:

1.) I want to take off some of the emission control parts. Im going to straight pipe it and will be getting it up on a hoist next weekend to do so. I dont often get the opportunity to get it in the air so I want to know if there is anything I should do while it's up there. As I understand it most of the related changes are carb related? fill me in?

2.) The car is idling (steadily) at 550ish rmp and is not having any issues but, I know that it should idle at 800 rpm. Should be pretty easy to adjust that but I cant find the idle adjustment screw. I know where the mixture screw is but I dont believe that will help me at all. Where is that screw? is it just the throttle adjustment?

Thanks in advance for the help and sorry for the lack of general knowledge.

Also sorry for the hostility in the intro, however we all know how people are on the internet.

I'd say, if once you removed all the emission related parts and once you're straight pipe, if you're able to keep a steady idle at 550rpm, do so!

For adjusting, here is the reference image as in Mitchell OnDemand :
