problems with temp and sputters

Some of the mods are single turbo Borg warner 262s, v-mount, greddy blowoff, emission block off, greddy compression tube, walboro 255, street port with ra classics, atkins solid corner seals, full greddy high power exhaust, 550 primaries 1200 secondaries, light weight flywheel, act clutch.

The problem i am having is the car runs rough and sputters when it gets close to 80 c when i first start it its fine and it revs fine. The engine was rebuilt by a local shop it wasn't tuned. The cars temperature climbs all the way to 100c at idle.

I changed all the sensors, coils, ran ground wires, wire harness, and even changed the power fc to a different one

You shouldn't be seeing 100deg. C at idle. How are the fans set up? Are they running? Stock fans?
