Odd water temp problem

I was wondering if anyone has encountered a problem like this: Car warms up fine and my Power FC used to read 83C fairly quick and hardley ever got past 87C, mostly cause fans are set to come on high at 85C. Now my car warms up fine but stays around 78C a little longer than usual and will rise as high as 96C and even drop to around 82C pretty quick(a few minutes). This fluctuation seems excessive for a proper functioning cooling system and driving in moderate climate (75F ambient) and moderate traffic.
One quick note, I have a GT35R single turbo, Koyo radiator, dual oil coolers, ASP medium intercooler and AST elimination kit. I'm thinking maybe the water temp sensor for the Power FC my be off or maybe my fans aren't coming on high at the right time or maybe even my thermostat my be causing problems (haven't changed it in almost 5 years). I'm not quite sure so I'd figure I'd post and see if anyone else have experienced this problem. I was going to post on the Power FC forum but I'd figure I'll try this one first. Any advice will be appreciated guys.
Thanks, Jerry

I think you're due for a new thermostat. As time goes by, the thermostat gets lazier and slower to open, so you'll have a momentary spike followed by cooler temps.

Get a new Mazda thermostat and pop it in there. If nothing else, it's a good place to start.

Thanks Dale, do you happen to know the best/cheapest place to get a thermostat (not a dealer I would assume). Even if it ain't my problem it wouldn't hurt to change it, and my radiator cap while I'm at it. Thanks again, Jerry
