what is a safe temp range to keep the car at? what would be overheating?

It depends on 4 major factors (assuming similar radiator efficiency). How you are driving, ambient temperature, coolant type, thermostat rating.
Normal driving, 80-95 deg F ambient, NPG coolant, 180deg thermostat = 185-190 deg F
Hard driving, 80-95 deg F ambient , NPG, 180deg thermostat = 195-205 deg F

In racing conditions temperature can reach 230 deg F. If you are crusing on the highway and seeing 230 (it probably won't stop at 230 either) then you have a problem.

Everything stock and ambient temperatures @ 85f - I would not allow the OEM temperature gauge to rise anywhere above the halfway point.

My advise - get an aftermarket temperature gauge and keep it below 220f for starters. Then go aftermarket radiator, thermostat, etc, etc. Shoot for 180f -200f for longivety.

You want an aftermarket water temp gauge.

IMHO, the best thing is to install a 2nd gen thermoswitch and then you should see the fans kick on at 210f. It will cycle between 210 and 180f, all of which is just fine. If you see it above 210 but below 225 for brief periods of time, then don't sweat it much. It's when it pushes above 225 I would start to adjust my driving to get temps down.
