antifreeze, whats the purpose besides

Question, does anti-freeze serve any other purpose than just keeping the water from freezing? Why wouldnt just "distiiled water" 100%, work in climates where the outside temp never goes below 32 degree F.?
Does it help raise the boiling point of the water, does it have a conditioner in it, does it help reduce sytem pressure? Just wondering, because I have only 100% distilled water in my car right now, only temporary, I am flushing the system.

Then that would explain why, today, when I was at WOT, (wide open throttle) my overflow tank, well, overflowed. it was easy to tell when it overflowed because I still have the hood off of my car, so the water would spray onto the passenger side of the windshield. It only did it under WOT though, normal grandma driving everything was fine. Unless I had the overflow tank to full to start with, or something else is going on, god forbid i hope not..

Anti-Freeze also lubricates your water pump.

You drive around without a hood? Thats a bit odd....

AFAIK the coolant does make the water boil at a higher temp. So it is usefull all the time.

just for now. Ijust finished my engine and want to make sure everything is working properly/ not leaking. Much easier to work on with the hood off.
