If you did remove material it probably wouldn't be in a flat/uniform manner, and you'd also be removing the hardness layer that only extends 1-2 thou deep. I don't like to use irons that have been touched at all if I can help it.

The goal isn't to remove material. The goal is to just knock off the shine to create an oil-holding finish for the side seals.

One of the old-school rotary gurus recommended it to me prior to my GTUs race car buildup. That engine made great compression even with used irons, not sure if his technique helped but it made sense to me. It doesn't affect the nitriding, even the thinner layer on the later housings.
