Haynes manual or FSM downloaded from FAQ or www.aaroncake.net. It's simple, though. Get about 10 feet of plastic tubing and a funnel that fits tightly in the tubing. Put a drain pan under the tranny or diff. Wrench off the higher plug, the one on the side. Wrench off the lower plug and the oil will drain. Put the lower plug back on. Fill Through the hole where the higher plug was. For the tranny you'll want to run the tubing up into the engine bay and fill from there. Hold the tube in the hole while a buddy fills the oil. When the oil is up against the bottom of the hole (when it starts to overflow) you're done. Put the upper plug back on. Check the oil level after driving a bit, by putting your finger in that same hole.

IIRC the turbo tranny is slightly different. It might have seperate check and fill holes or something.

See FAQ for which oils to use in the tranny and diff, or search the forums for popular synthetic oils. Make sure the tranny oil is safe for synchros. Make sure the differential oil works with LSDs, or get an LSD additive seperately and put it in.
