Trying to find out what these connectors went to

Car in question is a 1982 and has not been driven in quite a few years so I am trying to piece together where everything plugs in/what is missing still. The wires come up from the front driver side of the car by the headlight, and then pass over the top of the radiator. Could one of these go to the coolant level sensor? Thanks for all the help!

Those look like plugs for sensors on the stock radiator. The single connector for the water level sensor on top of the radiator and the 2 pin one goes to the temp sensor at the bottom corner near the battery.
Yours looks like an aluminum aftermarket radiator and I assume it didn't come with the fittings for the sensors. They're not needed for normal operation though.

For the bullet connector (low coolant sensor), you can ground it and the dash light for low coolant will not stay on.

Yes it is an aftermarket radiator, but it actually has a plug on the top of it, I assume now that its for the low coolant sensor, so I think I will go ahead and order a new sensor for it.
As far as the 2pin connector that is a temp sensor, temp sensor for what? Coolant as well? I thought the coolant sensor (for the dashboard at least) is right under the oil pressure sensor by the oil filler tube. This is a picture of (what I thought at least) the dash coolant sensor that I am talking about.

Also I should mention I am saying all of this as someone who's water temp gauge isn't working.

Yes, but only in relation to operation of (part of) the air injection system. You can ignore it as far as normal operation. If you're curious about what it does, I posted about it recently in this linked thread.

Correct.

There are three water temp sensors:

1. On left side of rad (air injection system)
2. O
n back of water pump housing (control choke)
3. One below the oil pedestal (for gauge in cluster).

This is the 3rd new thread in a week about that sensor! Im going to buy stock in Koyorad because every new forum member seems to be buying one. They're hotter than the PS5!

If they get as rare that's gonna be irritating when I get around to ordering one lol

I just got one last week! Mine's an '82 so I need to relocate the oil cooler.
The OEM fitting brass ones are gone and mine is turning green, not something I want to be doing more track days with.

Mine is also an 82 so we both got the front mount oil cooler, but my radiator has mounting holes for the oil cooler so no need for an oil cooler relocation. I don't believe it is a koyorad though.

I have purchased an ebay aluminum radiator before. Had an issue where the low coolant sensor thread size was too small to fit the radiator. So I had to ground to the cable that time. Maybe that's why it was not installed.
