How do you plug unused ports in your carb?
 
I'm rebuilding my Nikki, and leaving off all the needless crap. What's the best way to plug/block off the unused ports?

Which ones? For the small vacuum lines, use good quality rubber caps.

if youre ditching the vac. secondaries and going to mechanical, use some jb weld to block off the holes for that or make a little block off plate for it.

How about the altitude compensator?
I'm thinking a homemade gasket and a block-off plate?

While we're on the subject, can I do away with the dashpot? Some say 'yes', but I don't want a car that's a pain in the ass to drive. What's the story on this?
