E8 and FC S5 stock vehicle harness question

Besides disconnecting each wire or sensor, is there a way to know what wires, sensors, useless stuff I can eliminate from my harness?
I am running E8 and my stock instrument cluster(Only way I know of to keep an eye on fuel levels).
The dash and vehicle have been 100% gutted. Stock fuel tank, but upgraded pump. Nothing under the dash attached to the firewall(blowers, a/c. heaters, etc.)
I put the s5 harness in but want to eliminate as much as possible to make it less cluttered and more maneable.

lol stop being slack and pull the harness apart

Ibe got the same, took me about a month on and off to full rewire everything and remove all the wiring I didnt need. (Im also running a E8)

Was a ***** of a job but worth it. Also I didnt do the plug and play I used a new E8 harness as I didnt want any issues
