Parts Values for my '81 GSL?

A couple of days ago, I put my Rx7 up on Kijiji to part it out as the rust has driven me to give up, but now that I'm starting to get offers, I'm wondering what would be appropriate to charge? Engine, transmission, seats, wheels, wiring harness etc.? Any help is appreciated.

Try looking through the first gen for sale section here and search for the parts your selling. This process will give you good insight on what RX-7 owners value their parts at and maybe how much you can sell yours for. Used factory parts don't really go for ridiculous prices. There are some aftermarket parts that are hard to find and can demand a good price.

Take a look at the prices pull-apart adertises on their website Cash for Junk Cars & Used Parts: Pull-A-Part Auto Salvage. That should
give a baseline. Some parts will be more in demand and should get higher prices like rotary
specific parts like engine, dizzy, nikki etc.

Ebay auctions that sold for things you have is another place to see what the item is going for.
